Javaaher polo, as the name suggests is all about indulging, this is my rendition of the dish, smoked basmati rice and lentil, cooked kateh style with heavy saffron for the Persian flavor, cardamoms with a touch of cinnamon and bay leaves for the Indian aroma, and pinion nuts for the southwestern touch... Trader Joe's provided frozen cherries, black currants, pistachios, almond slivers, and cashew nuts, inspired by Thai food, orange peels and barberries (zereshk) came from the Persian store, and for the extra mile the tofu was glazed with all the sizzling cherry juice piled around it in the pan, so as you can clearly see javaaher polo is all about going all out while combining what are normally three separate dishes (adas polo + zereshk polo + albaaloo polo = javaaher polo) and even by merit of its name, jeweled rice, is worthy of kings and queens.

Smoked Rice

You can find it among hot sauce and seasonings, it's a brownish liquid and as it's name says it smells just like smoke,It turns rice a little brown (depending how much you use ) , but it makes the rice to smell just like smoked basmati rice (BTW I miss that with Mirza Ghasemi and Cooli fish) !
My advice : if you're going to try that ,use very little and experiment,
It's also excellent for steak and I use it with shank of lamb as well as beef rib for BBQ.

I always bastardize old recipes. So, don't get me wrong if I add a bit of skepticism as well!
You added cardamomm fine! You like to add a Southwestern touch, go for it! You want to give it an Italian kick by laying a couple of Bay Leaves on there, be our guest!
But I feel that you cross the line a bit by adding things like tofu!
