I have invited my Dutch friend and her visiting parents over for the World Cup between Holland and Spain.  Interestingly, this morning I again thought of calling an old colleague from Spain, to introduce to this Dutch girl friend.  Over the years I tried to match them but neither one was cooperative enough... both were dating other people.

So for this afternoon, I am chilling  Gazpacho and a bowl of Spagetti-Squash Salad.

[I was introduced to spagetti-squash by the mother of my Dutch friend, 18 years ago; and my friend from South Spain wrote me my favorite recipe for Gazpacho. I am hoping for nice match(es) today.] goed eten/ disfrutar de estos platos:

Gazpacho (for 6)

2 large cucumbers (I prefer using the English ones, the kind we use for maast o khiar - firm with no seeds): peeles and chopped

1-1/2 cups fresh ripe tomatoes, chopped onions and parsley mixed salsa-style

1 cup vegetarian broth (or chicken broth)

1 cup vegetable juice cocktail

1 tbsp. (or to taste) hot pepper sauce (I prefer Mexican or Persian fresh green peppers, finely chopped)

2 medium ripe tomatoes chopped

1 bunch fresh basil (to taste)

You can puree the ingredients. I prefer my cold soup chuncky. Refrigerate 15 mins. Ladle into cups, add crumbles of feta cheese and a basil leaf on top of the individual bowls. It's perfect for a hot summer day.

Spagetti-Squash Salad (for 6)

One large bright yellow spagetti-squash, cooked in 2 glasses of boild water with lid on, cooled.  Fork out the spagetti-like flesh in a large bowl.  Let cool.

Brown mushrooms, about a dozen, sliced, saute'd with:

1 big chopped onion (less dark than our piyaz daagh)

1 cup tomatoe sauce OR fresh ripe tomatoes

1 tbsp. crushed Garlic (to taste)

Salt and Pepper to taste

I cup Dutch Gouda cheese

You can caramelize the onions, in sugar and vinegar. OR sautee choped onions and sliced mushrooms (separately), let simmer with tomatos or sauce. I use one pan to saute: onions, mushrooms and garlic - in that order.  Then add tomatoes or sauce, salt & pepper.

Mix sauce to squash.  Let sit in room temparature.  Ganish with pieces of Gouda.  You can serve hot, room temp or cold.

don't forget to wash down all the algae and soy beans with beer (B12 packed yeast). Hope quinoa's doing great too.

Giving quinoa another day. Smells so sweet. Fenugreek, mustard and fennel sprouts are out. Yabadaba doo!

someone mentioned B12 and I remembered my not having replied to You! associations always help the menopausal.

So, sprouts and seaweeds are fantastic sources of B12.  Plus soy beans, and Unwashed organic vegetables. the latter is my favorite plus the sublingual B12 liquid. do you eat clams and seafood in general?  because salmon (Wild & mercury-free type) sashimi and raw clams would give you great B12 also. 

gloomy here too, for now, love it! have a happy one as always child! Do you have Obeyd Zakani's Divan? 

quinoa sprouting for the 3rd time? there you go - vit B12! (no, just kidding - no B's in quinoa, unless using your tweezers you plucked he tiny sprouts off for a miniature salad :o))

i meant maca's main use is for hormonal regulation, during peri and actual menopause.

your protein intake sounds yummy my child (new info to me: kale has protein)

I'll have your breakfast smoothie soon, i'm sure it tastes even better than it reads. do you ever add ground organic brown flax seeds to your smoothies? very nutty flavor, also on top of salads.

You mean, there's no point in taking it if not hormonal? Didn't know this about maca...

The nothing guy died a couple of days ago. (;   Pleased you like it.

Mama Monda, I get plenty of protein. Spirulina, cacao nibs, nuts and seeds, cous cous, kale, nori, sprouts (absolutely packed), mushrooms, anywhere and everywhere. Only thing is Vit. B12. 

 

Nectarine, sunflower seeds and brazil nuts smoothie this morning, yummy to the tummy!

Maca roots work better than HRT, therefore can't be used for any constructive justification.  I guess you're being proactive in that realm. Nothing in the oven... presoaked beans for protein then. Or something. (my motherly side talking)

Domestic stuff are part of life too, at least the part we can have control over... not like wars or BP type mess, right?  Lemon juice and garlic, absolute must, thanks for your correction... those go in my veggie juice/ cocktail and therefore ommitted from the recipe I typed. Did you watch the Final? (see we don't only talk about domestic stuff, we are way more multifaceted :o) 

I hope you're having enough protein in your diet! and I wonder if the color on your toes is called Persian cherry red?

Love it!

I'm quite KiSS ('Keep it short and stupid') in the kitchen. Scotch bonnets are the hottest chillies around. I add a bit of lemon juice, celery salt and garlic  to turn it into a "gasp-a-macho"....

All your fault with your smoothies -  I now have a blender and just throw everything in!
