Some Background

by Sid Sarshar on

Sheelat (Department of Fishery) issues fishing rights to an entity for a fee and certain restrictions.  This is seasonal work and the scale of the operation varies.  In this case, the team lives in made shift homes during the fishing season which is mostly in the cooler periods of the year.  During spawning season fishing is prohibited.  Sheelat is very active in managing the population of the fish in the Caspian sea and has elaborate breeding programs.  Major rivers along the Caspian sea are guarded with armed solders during spawning season.  From an unscientific point of view, over the past ten years, I have noticed the demise of Sturgeon which is best known for it’s Caviar, and Mahi Azad (image 21), a pink flesh fish similar to Salmon to a point that is alarming.

Every time I visit Shahsavar, I make a point of going to watch these fisherman.  The team work and energy of this activity is very appealing.  I also get a kick out of listening to the local dialect.  I have tried to go out on their boats, but they are very reluctant to take me.  This is dangerous work and I would be in their way.  When my parental responsibilities are behind me, I may dare.

I usually like to visit Iran during Spring or Winter.  One of the reasons is good fish is seasonal.  Cold water forces the fish to produce more fat cells which makes the fish more flavorful.
