Spicy thai tofu with red bell peppers and peanuts
by Organic NUTritionist
18-Oct-2009

I have made this recipe a couple of times and it is really delicious with various textures and flavors.  It is a good source of protein with it's tofu content and high in nutrition overall.

I recommend a 1/2 cup side portion of short grain brown rice to go with it.

I also recommend buying all (if possible) ingredients organic.  :)

Enjoy...

spicy thai tofu with red bell peppers and peanuts Ingredients

1/4 cup olive oil
2 large red bell peppers, seeded, thinly sliced
3 tablespoons minced peeled fresh ginger
3 large garlic cloves, finely chopped
1 14-to 16-ounce package extra-firm tofu, drained well, cut into 1-inch cubes
3 green onions, thinly sliced on diagonal
3 tablespoons soy sauce
2 tablespoons fresh lime juice
1/2 to 3/4 teaspoon dried crushed red pepper
1 6-ounce bag baby spinach leaves
1/3 cup chopped fresh basil
1/3 cup lightly salted roasted peanuts

Preparation

Heat oil in wok over high heat. Add bell peppers, ginger, and garlic;
sauté until peppers just begin to soften, about 2 minutes. Add tofu and
green onions; toss 2 minutes. Add next 3 ingredients. Toss to blend,
about 1 minute. Add spinach in 3 additions, tossing until beginning to
wilt, about 1 minute for each addition. Mix in basil. Season with salt
and pepper. Sprinkle peanuts over.

Mamon waseh man cake khobeh? Yes I remember that part!

by Anonymouse on

It is funny!  You're going to have to ask DK jaan or Bahram9821 jaan to find that song.  As you said it was a single 45 and hard to come by.

I couldn't find that version but in response to the recent demand for Iranian dancing, here is a dance about happy birthday!

SamSam, Got Prunes?

by Organic NUTritionist on

I think it was the prunes...  :)  They have that reputation.  And, how much Spinach did you eat?  Veggies in general are a good source of fiber and regularity.

As for your observation as to who gets the most heart attacks, I bet if you analyzed exactly what everyone eats, how much they exercise, what kind of environmental polutions they are exposed to, and their genetics you would find the true answer.  Honestly, if you go by statistics, the chances of heart disease are going to be higher if you don't eat the right foods.

Thanks for your post, it was funny though :)

Dear Organic Nutritionist; You see the french munch on the  4 major food groups; Jambon, coffee, donuts & cigarretes and yet they have less heart attack rates than US & UK. Again, Italians eat ton of pizza & drink ton of wine yet again their heart attack rates are much lower than Americans & British. So I have come to the conclusion that what you eat or drink dont matter but speaking English will kill you.

& a question that confuse a heck outta me. I went to china town to buy dried plum for my spinach khoresht & the dude kept saying we have  prunes so i kept saying I need plums not damn prunes and he kept saying he has prunes until i figured it out that prunes are dried plums why they call it that .and is it true that eating too much spinach in a row bad for digestives? because next day i had to look close and deep into my black stool thinking i had unexplained cancerous internal bleeding or something until i saw those spinach leafs and had a sigh of relief with a morning smile. funny how my 10 yr old princess had the same stool color which didn,t frighten me since i already figured it out.

hey, thx for the blog & cheers!!!

Those cupcakes are to die for! I had no idea you are in Australia! I have a good friend there who keeps asking me to visit. I think now I might just to get my hands on these cupcakes.

Yeah it's the usual Tavalodet mobarak song but the original version (back then on a single record, damn it seems like a lifetime away) was sort of like as if it was recorded in a real party and this nasal sounding kid would ask this question half way. I tried to find it online but can't find that version.

Anonymouse HELP! You'll get to dance along if u find it :P

Very funny Holly, I haven't heard that but it sounds pretty funny!  You mean the usual tavalodet mobarak song says that???  :)))

Speaking of cakes, I just have to share these cupcakes with you!!!  ;)

grams of fat/day

by Organic NUTritionist on

Holly jan, just fyi, here is a great and easy formula to see how many grams of fat you need in order to maintain your current weight (also fat percentage and calories):

Write your body weight then, multiply.

Moderately active female:
____ pounds x 12 calories = _____ total calories per day.

Take total calories and multiply by 30 percent.

____ calories per day x .30 = ____ calories from fat per day.

Take calories from fat per day and divide by 9 (there are 9 calories per gram of fat):
____ calories from fat per day divided by 9 =____ fat grams per day.

This whole nutrition blogging thing with ON just reminded me of that Farsi Birthday song where half way through the little kid said "maman vasseyeh man cake khoobeh?' Does anyone remember that? I remember always thinking she wasn't very bright. I mean why tempt fate by asking? Just go for it already lol

That makes you the Mommy ON jan ;)

Thanks I don't think I will have to rely on them being 'honest'. The bakery section is a little 'dakkeh' and the door is wide open and you can see all their materials and work space. I'll check it out.

Yes a Trans fats blog will be much appreciated.

Trans Fats in bakeries

by Organic NUTritionist on

Holly, you can try and ask them what kind of "oil" do they use in their bake goods.  Hopefully you will get a truthful answer.

Many bakeries use trans fats because it is cheap and has a long shelf life.  I will probably do a Trans fats blog soon.

Thank you.

Why eat less meat

by Organic NUTritionist on

People should consider eating less meat as a way of combating global warming, says the UN's top climate scientist...The UN Food and Agriculture Organization (FAO) has estimated that direct emissions from meat production account for about 18% of the world's total greenhouse gas emissions," he told BBC News.

The Wheat Barbari Was referring to doesn't have a label! They make it there in the Tanoor, you're lucky that they put it in plastic before putting it on the shelf. What should we ask the 'Noonva' guy to determine if trans fat might be a concern? I don't get to that neighborhood much but I do take every chance I get to buy the Barbari when there.

One thing I can't be accused of is being shy BTW :) I didn't bother to ask because 5 vs 7 of anything in anything just didn't seem like much anyway. But I guess 2g less is 2g less!

Thanks for the good info as always.

Tofu likes :)

by Organic NUTritionist on

I think that people like to use tofu as an alternative to animal protein once in a while.  Tofu is an excellent source of vegetable protein.  For example 1/2 cup of raw firm tofu has about 10 grams of protein and one 3 ounce egg has about 6 grams.

Ask away!!!

by Organic NUTritionist on

Dear Capt.,

Thanks for your nice email and post.  I don't mind answering questions, I am used to it, and it keeps me up to date as well.

I am trained in evidence based practice and have access to a lot of current studies and I enjoy searching.

Whole Wheat Barbari and Feta

by Organic NUTritionist on

Of course, it is better than the all white flour barbari as far as nutrition is concerned.  But check all the ingredients and be on the look out for trans fats which is (in my opinion) more of an issue than white flour.

As for the feta, I think he meant one has 5 grams of fat per serving and the other has 7 grams.  If you are counting your fat grams this could come in handy.

Don't be shy to ask questions if you dont understand, I had to think about what that meant too!

Anonymouse

Thanks Anahid and Holly but you need to join in the dances too!

by Anonymouse on

I don't want to be the only one to peck biyam in the subject lines!  You guys and others need to join in.  You can also ask Yolanda, I think she wants to but needs a little encouragement!

I'm hoping the dance craze catches on and people who have the gher in their kamar faravan but do not know where to unload join and peck as well!  Just remember the dance needs to be in the subject line!  It doesn't have to be now, but slowly and surely as the time goes by ;-)

Aah! Aah! Peck! Peck! Hair! Hair! Shake! Shoulders!

Everything is sacred.

HollyUSA

Feta

by HollyUSA on

I bought low fat French Feta for the first time ever this past week and you really can't tell the difference (and trust me if there is a difference I can always tell). I asked the guy at the deli/cheese counter how much lower in fat t was and he said 'regular is 7 and this is 5'. I didn't bother to ask 5 and 7 whats per what because it seemed hardly worth the trouble. I just figured less fat is better and left it at  that.

Organic jan, any thoughts?

Wow, Anonymouse, Your comments on this blog are funny

by Anahid Hojjati on

I just saw this blog.  As always, Anonymouse, you are funny. I agree with your take on Tofu.  I don't like it and don't get why people like it.  Dear mouse, I think it is funny how you actually listed all the food that you eat on one day. Thanks for bringing smile to me on an otherwise not so happy day.

How to elevate HDLs by 7-Keto

by Organic NUTritionist on

Dear Capt.,

I was searching around for scientific information about 7-Keto and it's fat-burning properties when I came across this and thought about you:

Scientists have known for some time that DHEA supplementation can decrease blood cholesterol levels.  A study revealed that 7-Keto contributes to this cholesterol-lowering activity.  Ten volunteers aged 27 to 72 years applied a gel containing 25 mg of 7 Keto to their abdominal skin for five consecutive days, very beneficial changes occurred in cholesterol composition--beneficial HDL (high-density lipoprotein) rose significantly.

A significant rise in beneficial apolipoprotein A-1, a protector of cardiovascular health, also occurred.

These findings indicate that 7-Keto has cholesterol-lowering effects at a dosage that is even lower than that required to achieve the same effects with DHEA.

Peanuts aren't nuts!

by Organic NUTritionist on

Peanuts are a legume along with dry beans, peas and lentils. One ounce of roasted peanuts provides about 10 percent of the daily value of folate, a B vitamin recommended to help reduce the incidence of birth defects and lower the risk of heart disease. Peanuts also are an excellent source of niacin, providing about 20 percent of the daily value.  Peanuts have no cholesterol.

Nuts and peanuts are food sources that are a composite of numerous
cardioprotective nutrients and if routinely incorporated in a healthy
diet, population risk of coronary heart disease would therefore be expected to decrease
markedly.*

Like everything you want to eat them in moderation.  Peanuts are high in calories, one cup has about 854 calories--and that's high!!!

You may also want to vary your nuts consumption so that you get the benefits of different nutrients that other nuts have to offer.  For example walnuts and almonds are good nutrient sources.

Walnuts. One ounce of walnuts (about 14 shelled walnut halves) is all that is needed to meet the 2002 dietary recommendation of the Food Nutrition Board of the National Academies’ Institute of Medicine for omega-3 fatty acids.

Almonds. One ounce of almonds (about 20 to 24 shelled whole almonds) provides 35 percent of your daily value for vitamin E. Vitamin E may help promote healthy aging. A study reported in the Journal of the American Association (June 26, 2002) suggests a diet rich in foods containing vitamin E may help protect some people against Alzheimer's disease. The study also found vitamin E in the form of supplements was not associated with a reduction in the risk of Alzheimer's disease.

Anonymouse: Flaxseed and Niacin

by Organic NUTritionist on

Anonymouse, Flaxseed and Niacin can be bought at various markets (supermarkets) and health food stores and can best be bought through professionals (ND's, nutritionists, and some MD's, etc.).

As far as what they are?  Here is some info:

Flaxseed:   http://nccam.nih.gov/health/flaxseed/index.htm

Niacin:  http://www.nlm.nih.gov/medlineplus/ency/article/00...

In my opinion tofu is a great alternative to meats, if you make the recipe above you will really like it.  Here is some more info about tofu:  http://vegetarian.about.com/od/glossary/g/Tofu.htm

As for your question about if you can get fat from eating too much salad, the answer would be yes specially if you consider what can go into a salad; like cheese, mayo, ham, corn, beans, potatos, and all the dressings that are high in calories and so much more.
